Secret ingredient!! ~Curry Powder~ (any regular brand is fine)
5qt or larger Crock pot/slow cooker, or massive stove top pot/kettle
THIS RECIPE IS EASY, QUICK, AND LOW MAINTENANCE – THIS IS NOT A HOT & SPICY DISH
I find it cooks ideal if you layer the kielbasa and kraut into 5 layers: kraut, meat, kraut, meat, kraut – in that order. So once you’ve prefabricated one layer of each, just repeat these steps. Turn on and set crock to High/4 hours. Put approx 1/3 of the kraut (as is) in the bottom of your pot. Keep lid on between adding ingredients.
Cut your onion in half “lengthwise”. Cut 1/3 of the onion into thin/med “lengthwise” slices into pot on top of kraut. Save remaining 2/3 for next 2 layers. Add 5-6 shakes (or approx 1 to 1.5tsp) of apiece seasoning on top of the kraut mixture, except for curry and black pepper.*
*curry and black pepper are added only to middle/2nd layer of kraut. Add same amt as other ingredients.
Cut kielbasa into approx 4in long pieces and lay half on top of kraut mixture. Save remaining half of kielbasa for next layer. Do not season the meat, only the kraut/onion layers. Repeat these steps finishing with your 3rd kraut/onions/seasonings layer.
**SUPER IMPORTANT STEP**
DO NOT ADD BEER! LET COOK FOR 2 HOURS! WHEN KIELBASA AND KRAUT HAS COOKED FOR 2 HOURS, add entire bottle of beer SLOWLY so it doesn’t foam all over the place. Turn crock ½ way around so it doesn’t scorch kraut on one side. Let cook for at least 2 more hours (no more than 5 is necessary) and ENJOY!! (If you have already added the beer, don’t panic. It will still be good, but next time you know it’ll be even better!)
BEST served with mashed potatoes and sausage rolls. Have spicy brown mustard avail.
Feeds 6 once or 3-4 twice.
Special Hints and Tips:
I intentionally use canned sauerkraut. The bags/jars are ok, but seem to demand a tiny something, plus cost a bit more and have far too much juice. You will notice that this recipe subdues the sour flavor of the sauerkraut and enhances the natural sweetness in the kielbasa and cabbage.
A lot of stores have a seasoning called “poultry seasoning” not to be confused with any kind of salty seasoning. THIS DOES NOT CONTAIN SALT, but sage, thyme, corriander, marjoram, allspice… etc.
I have a Rival Crock Pot and would strongly advocate using your crock pot for this. Just don’t forget to turn the pot a half circle when you add the beer. It’ll prevent scorching when cooking on high. It’s STILL WELL WORTH COOKING this if you don’t have a crock pot, but just know you’ll have to check on it/stir it more and make sure you check the temp often so that it does not scorch or cook too fast.
I personally do not drink Labatt Blue, but I for this dish, I use Labatt Blue over all other beers. This is where most people go wrong, and I was one of them. I have prefabricated the mistakes for you here! As a beer lover, I have wrongly tried all the expensive, high end imports and domestics and they challenge the flavors of the dish too much. It might seem hard to believe, but trust me on this one. You want a beer that submits to and enhances the kielbasa and kraut, not exacts its dominance. Most of the delicious beers I love can only be purchased by the case or at the very ideal in a six pack and do NOT come cheap. (If you think about it, it makes sense. Really good beers are for drinking, and enjoying as a single and complete flavor. Right? Purchase them, for sure, but save them for drinking “with” your completed dish!) IF you can't find Labatt Blue, Bud or Miller will do in a pinch, but make the effort to get Labatt Blue.
I only get Eckrich Kielbasa. Not smoked sausage. Not another brand. Beef only, low fat, low salt or other variations take away from the flavor GREATLY!

Slice the avocado down the middle and remove the pit. Scoop out the meat of the avocado with a spoon and place it in a dish. Smash it with the back of the spoon until most of the lumps are out then add two heaping tablespoons of the salsa and blend. Place the mixture in a nice dish and place the dish on a massive plate. Surround the dish with the tortilla chips and voila! a tasty and fast appetizer. Serve immediatel and ENJOY!
